BELIZE- Fry Jacks

Alright, Belize Navidad everyone! Did you know that Belize is the only Central American country that speaks English? I’ll show you a video that has a bunch of facts that will just make you want to go to Belize!

One of their best known staple breakfast dishes are Fry Jacks. The thing that I like most about it is it’s ok if you don’t cook it right, there is no egg in it. So let’s roll! (Sarcastic comments in parenthesis!)


You will need,

2 cups flour,

2 teaspoons of baking powder (Will there only be bland ingredients in this recipe?),

1/2 teaspoon of salt (Humph),

1 tablespoon of sugar, (What the…)

Oil for frying, (We didn’t have a lot, but it still worked)

And 3/4 cup of whole milk (Wow, no unique ingredients, never mind, carry on)

In a large bowl mix together the flour, sugar, baking powder and salt. (This is the most fun thing I have ever done in my life!)


Then you make a well, (Wow, that will cost a lot of money, first I need to dig a huge hole…) in the bowl, meaning pushing the dry ingredients to the side of the bowl. Now, knead the dough, (Really? Kneading is so tiring!) for one minute (Oh.) and divide it into 6 pieces, kinda C shaped (I C)


And now, let’s fry. (Cue AC/DC music)

Pour 2-3 inches of veggie oil in a large saucepan. Wait until it’s 350F  and start cooking! Unfortunately we couldn’t tell when it was cooked (Ha) so we took trials. Well,-Ca-Pade! let’s go!

Trial One: Wait until it bubbles

Result: It never did

Trial Two: High heat

Result: Will, would you like a Burnt Jack?


Trial 3: Take the saucepan off the oven, wait a minute, and put the dough in it.

Result: It worked the first time, but not really for the rest.

Trial 4: Medium low heat

Result: Perfection



2 cups flour
2 teaspoons baking powder
½ – ¾ teaspoons salt
1-tablespoon sugar (optional)
¾ cup whole milk or canned coconut milk
Oil for deep-frying
In a large bowl mix together the flour, sugar, baking powder and salt.
Then make a well then add milk, knead dough for about 30 seconds to 1 minute to form soft dough.
Divide dough into 6-7 equal pieces. Set aside for about 10 mins.
Place each one piece on a heavily floured board and roll out dough into a circle. They do not have to be perfect circles.
Divide the circles in half and then place a slit on dough.
In a large, saucepan pour vegetable oil, until it is at least 3 inches and place on medium heat until oil is 350 degrees.
Fry until golden brown about 3-5 minutes depending on size. Remove with a slotted spoon and drain on paper napkin. Let it cool
Serve warm with honey, butter, cheese and refried beans.
