CAMEROON: Vitumbua

img_2633IT’S TIME FOR A FOOD BATTLE!

The dish? A Cameroonian Donut called Vitumbua. The two ingredients fighting?

FIRST, WE HAVE A INDIGENOUS FRUIT… or nut… I don’t know OF HAWAII. YES! WE ARE TALKING ABOUT… COCONUT!!!!!!! AND THERE ARE ACTUALLY TWO COCONUT INGREDIENTS! FIRST! COCONUT MILK!!!!!!

AND ON THE OTHER SIDE, WE HAVE THE NATIONAL FOOD OF CONNECTICUT! YES, I’M TALKING ABOUT NUTMEG!!!!!!

THEY WILL FACE OFF IN THE FIRST, AND PROBABLY ONLY, FOOD BATTLE!!!!!!!!!

Oh yeah, the ingredients are…

1 1/2 cups of rice flour (There are like a million kinds of flour),

2 tablespoons of flour (Weird),

ONE SCANT CUP OF COCONUT MILK!!!!!!!!!!

1/4 cups of sugar (Yes please?)

ONE TEASPOON OF GROUND NUTME- Wait, only one teaspoon? So 1 cup of coconut milk and only 1 teaspoon of ground nutmeg? Yeah, haha, good luck,

1/2 teaspoon of salt,

1 teaspoon of dried yeast (It’s not bread though)

1/4 CUP OF SHREDDED COCONUT (EVEN MORE COCONUT! THE NUTMEG DOESN’T HAVE A CHANCE!)

And some cooking spray (Wat)

So the first thing you do is combine all the ingredients except for the cooking spray- Wait, wait, wait. All of the ingredients? Meaning the the nutmeg and the coconut are ALREADY in the bowl FIGHTING eachother? Lets take a live look.

Mix until it’s smooth. Let’s take a look at the fight now

OHHHH! AND IT LOOKS LIKE THE COCONUT MILK HAS NEARLY DISSOLVED THE NUTMEG. BUT WAIT, THERE’S A TRACE OF NUTMEG!!!!!!!!!!!!

Next, you cover the bowl with a damp dowel and let it rise for an hour. In the meantime you can figure out how many time I’ve used “In the meantime” jokes. Now preheat the oven to 400 degrees. Once it’s at 400, spray a muffin tin with cooking spray and stick it in the oven. For 2 minutes. Sorry if I’m being a bit brief. It’s just that the climax of the battle is coming up. AND NOW WE POUR THE BATTLE MIX INTO THE MUFFIN TINS EQUALLY! YEAHHHHHHH! THE NUTMEG IS COLORING THE MIXTURE BROWN!!!!!!! Now lower the oven heat to 350 stick it into the oven for 5 minutes. Here comes the weirdest part of the recipe. FLIP the vitumbua (yes, in their tins), and stick it back in the oven for about 6 minutes.

AND NOW YOU’RE DONE! BUT WATI! THE BATTLE HAS NOT FINISHED! THE FINAL TEST IS THE TASTE TEST. The judge, Jack from Trip Over Food, is the referee. He takes a bite… and…

He likes it! (That’s a bad photo of me) He says “This gets an 85/100 for sure!”

Okay, but which flavor is more powerful?

“Oh, the nutmeg by far”

AND THE NUTMEG WI-

Wait, a flag has been thrown down. A bunch of referees come out

“More nutmeg than needed in the recipe. There is supposed to be only 1/2 teaspoon of nutmeg, and 1/2 teaspoon of cinnamon. Nutmeg has been disqualified. The coconuts are the winners!”

OHHHHHHHHHHHHHHHHHHHHH! AND COCONUT WINS! THAT WAS QUITE CLIMATIC!!!!! OR MAYBE ANTI-CLIMATIC!!!! I DON’T KNOW!!!! ALL I KNOW IS THAT THE UNDERDOG LOST!!!!!!!! THIS IS PROBABLY THE LAST FOOD BATTLE!!!!! GOODBYE!!!!!

  2. Hi Jack, what a strange recipe. So unusual, who knew nutmeg and coconut would battle? I love your humor and wit. Even though I most likely will not be making these, your recipes are very fun to read. When your first cookbook comes out, it will be as interesting to people who cook as to people who don’t (me?) because it will be such an amusing read! 😻 AC
